Egg Muffins

I am in love with these egg muffins! And they are even Paleo Approved!! I have been making them once a week a doubling the recipe so I can just zap them in the microwave in the morning and have a quick and healthy breakfast! I have never been a huge fan of eating breakfast, but since it is the most important meal of the day, I have come to like it ๐Ÿ™‚

Below is a recipe I made over two years ago when I was doing the pale diet. Since then, I have simplified the version and literally used anything I had around the house or left over to put inside. They come out perfect every time! This time I used a combination of:
fresh leaf spinach
tomatoes
onion
broccoli
turkey bacon
a touch of parmesan cheese
eggs (I used about 2 dozen eggs to make 3 dozen muffins)
half and half
salt
pepper
a dash of cayenne
fresh parmesan to top
coconut oil cooking spray
large tin muffin pans
I made each muffin different. I also made a bunch with a friend which is why we made so many. Be sure to grease the tins very well in order for easy removal when cooled. I used coconut oil spray to grease.
Directions:
1. Preheat oven to 350
2. Dice all ingredients into small pea sized bites- I steamed the broccoli first
3. Cook bacon and chop finely
4. Beat all of the eggs together in a large bowl and add some organic half and half
5. Grease Muffin Pan with coconut oil
6.ย place veggies in each greased muffin tin
7. Ladel egg mixture into pans (do not fill to top they will rise)
8. Cook for 30-40 mins unil golden brown
9. store up to 4 days in refrigerator

Paleo Muffins (this was a first batch a coupe of years ago)…
You can really put anything you want into them but this makes the best combo!
Paleo Egg Muffins:
1 jalapeรฑo pepper
1 Red Bell Pepper
1 Green Onion (Scallion)
1 Large Onion
3 Slices of Bacon or Turkey Bacon, cooked
2 TBSP Coconut Milk
2 TBSP Coconut Oil, Melted
12 Eggs
2 Muffin Pans (I prefer the tin ones they come out easier)
1. Preheat oven to 350
2. Dice all ingredients into small pea sized bites
3. Cook bacon and chop finely
4. Beat all of the eggs together in a large bowl and add coconut milk
5. Mix together all ingredients throughly
6. Grease Muffin Pan with coconut oil
7. Ladel egg mixture into pans
8. Cook for 30-40 mins unil golden brown
9. store up to 4 days in refrigerator
