Mexican food is my jam! I could eat chips, salsa and guac all day! Especially in the warmer months. I love this taco salad because of the secret ingredient… Doritos!
This recipe will feed about 6 adults as a main course. I try to use all Organic ingredients when possible. When not, it’s a mish-mosh! You may use all turkey or beef if you prefer.

WHAT YOU WILL NEED:
- Romaine Lettuce – 1 large bag
- Bag of Doritos (about 2 cups crushed)
- 1 Can of Kidney Beans
- 1 Can of Sliced Black Olives
- Thousand Island Dressing
- Grape Tomatoes
- Taco Seasoning (1 package for every pound of meat)
- Extra Sharp Cheddar Cheese
- 1 lb of Organic Beef
- 1 lb of Organic Turkey
I start by browning the meat with about 1/4 cup of water in the pan so I do not have to use oil. I use my cast iron skillet to cook the meat. After all of the meat is browned and chopped up I add the seasoning. I cook two pounds of meat so I use two packets. You can also make your own seasoning if you prefer, it will have a lot less sodium. Add another 1/4 cup of water to the meat once you stir in the seasoning. Let this simmer for about 5-10 minutes until most of the liquid is absorbed. Sometimes I will add more water if needed.
While the meat is cooking I prep all of the other ingredients.
Wash, chop and spin the lettuce. I LOVE my OXO salad spinner! You can find it HERE.
Rinse and chop the tomatoes. I love using my Chop Wizard, I use it for EVERYTHING!
Rinse the kidney beans and shred the cheese. Drain the olives.
You can set everything up buffet style or pre mix it and let the dressing soak in for a little while.
Add the Thousand Island Dressing to taste. You can also use Catalina Dressing if you prefer. I crush up the Doritos and add them last on top to prevent them from getting soggy.
