Zucchini Tots

I am in love with these Zucchini Tots! I originally got the recipe from Skinny Taste and changed it a bit as I went along. They are easy to make, and pretty healthy. I serve them as a side dish with dinner, a light snack, or even heat them up for a quick breakfast the morning (since they have egg in them I feel it is breakfast appropriate).

You will Need:

  • 3 small zucchini (or 2 cups shredded)
  • 2 eggs
  • 1/2 c. sharp cheddar cheese, shredded
  • 1/2 c. seasoned bread crumbs
  • 1/2 of one large onion, chopped
  • garlic powder to taste
  • salt and pepper to taste
  • coconut oil
  • small muffin pan, I used one with 24 inserts, you may also use 2 small pans with 12 inserts

Directions:

  1. Preheat oven to 450
  2. Melt a Tablespoon of coconut oil in the microwave and brush your muffin pans with it
  3. Shred the zucchini and place in a kitchen town, ring out water
  4. Mix all ingredients thoroughly in a large bowl
  5. Fill each muffin cup firmly to the top by pressing down with your fingers or the back side of a spoon
  6. Bake for 18-20 mins or until the top is golden brown
  7. Let cool for easier removal, use a butter knife to pop them out
  8. Serve and Enjoy!

* 4 tots = 1 serving, and is only 108 Calories! 🙂
