With fall being my favorite time of the year I love to enjoy it by cooking comfort foods. These homemade pumpkin ravioli’s are to die for! They are locally made at Springfield Ravioli Company right outside of Philadelphia. The company, which originated in Italy has the most amazing homemade products! The raviolis are sold frozen unless you get them fresh on the day they are making them. However, you can order almost all of their products through their website. Such as another favorite of mine, spinach fettuccine! Another reason why I love this meal is because you can grab it right from the freezer whenever you are craving something sweet.
*Ravioli’s: Boil water. Keep the raviolis in the freezer until the moment the water has boiled. After the second boil, cook for 10 minutes. Timing is crucial with these so be sure to set a timer.
*Sauce: The sauce is also from Springfield Pasta Co. It is their signature alfredo sauce. I used a pint size. They also sell quarts which you can use if you are making two bags. One bag is perfect for two people. I heated the frozen sauce up in a pot on low and added about a teaspoon of cinnamon and 2 tablespoons of brown sugar. Next time I am going to try it with pumpkin pie spice. If you like sweeter foods you can add more to taste. I like mine with just a hint. You can also add raisins and your choice of nuts, I would suggest walnuts or pecans. Pour the sauce over the raviolis, gently stir, and MANGIA!!
